The 3rd Annual Big Apple Barbecue Block Party, which takes place on Saturday and Sunday, noon-6pm, puts the country's top pitmasters in Madison Square Park for your finger lickin' pleasure. As a result, we've got pig on the brain.

What Have They Been Smoking?
Oscar's Adirondack Smoke House has been smoking for almost 60 years; their bacon is mind-blowing (other offerings, including chicken, sausages, and pork chops, are nearly as good).

Pigs with a Pedigree
Not our Berkshires, but England's, Berkshire pigs are an especially flavorful breed, carefully controlled to preserve its heirloom characteristics. You can read about them here, eat them at Blue Hill, 75 Wash Pl. [6th/Wash Sq. W.] 212.539.1776, or buy them (loin pork chops) from Ottomanelli, 285 Bleecker [Jones/7th] 212.675.4217.

Sausages: It Ain't the Meat, It's the Motion
Secret supplier to some of the city's top eateries, unassuming Salumeria Biellese, 376 8th [29th] 212.736.7376, has been making these homely beauties since 1925…Macelleria Falorni has been grinding 'em out in Italy since 1729. Their pork sausage with Chianti is brought in weekly by Esperya.

A few our favorites: Calabria Pork Store, 2388 Arthur [183rd/187th] 718.367.5145, Corona Heights Pork Store, 107-04 Corona [108th] Qns., 718.592.7350, Faicco's Pork Store, 260 Bleecker [6th/7th] 212.243.1974 (and in Bay Ridge at 6511 11th Ave. [65th/66th] 718.236.0119), and Oppenheimer Meats, 2606 Bway [98th/99th] 212.662.0246.
