Proud to be Flaky Pie School
the skint

It doesn't take much to get us thinking about pie. Summer? Blueberry pie. Fall? Apple, pumpkin in a pinch.

Our friend Julia makes pies that we sometimes dream about, but she lives in San Francisco, which makes her more of a frenemy.

Leslie Dumont loves a good pie, too. But not long after she started baking, Dumont's family begged her to stop. Realizing that she wasn't a natural-born baker, she persisted by taking many culinary school classes until she became a good, a really good, pie maker.

For a while, she created Proud to be Flaky frozen pie crusts and sold them to food shops in the area. The Times called them "better than homemade." But making them that way was too expensive to sustain.

Now Proud to be Flaky is her pie school where you will learn to make great pies and have a lot of fun in the process. The focus is getting the crust right and you'll get your hands floury. There is a maximum of four students in each three-hour class, you'll eat your work with wine and cheese, and you'll take home a batch of pie dough. Upcoming classes are scheduled for October 3 and November 7, 6-9pm, $75.
